Beef Stir Fry
This is an easy, fairly quick dish to make for dinner. It takes longer to prep your ingredients than it takes to cook it. If you have time to cut your veggies ahead or have some already available in the freezer, you can have this ready in under 30 minutes. I served it over rice, but it could be served on noodles.

2 cutting boards 1 for veggies and 1 for meat
rinse, dry and cut your meat into strips. (if you are using ground meat, skip this part)
Measure out the Japanese BBQ Sauce
Put meat into a bowl, add the sauce and stir well. you want the meat to be coated. Set aside.
cut your veggies and mushrooms
put a couple Tablespoons of olive oil in your skillet. Heat the skillet to med high heat and then add the meat. stir until the meat is browned. Put the meat back in the bowl, with juices and set aside.
return your skillet to the heat and add about 2 Tablespoons of oil. put in the peppers and onions.
wait until the peppers and onions have started to soften. About 5 minutes, then add the mushrooms and stir for another 5 to 10 minutes.
Once the veggies and mushrooms are soft and starting to brown, put the meat and juices back into the skillet
Cover and let simmer on low for 10 to 15 minutes
uncover and stir meat and veggies together. Put in a bowl and serve. it can be consumed just like it is or serve it over rice. Noodles could be used too. whichever you prefer.
