Cherry Kirsch Pork Schnitzel – A German Classic with Character

An authentic German classic we decided to explore in our own kitchen. Pork cutlets topped with a rich kirsch cherry sauce — simple ingredients, bold flavor, and a little adventure on the plate.

Equipment

1 14 inch Cast Iron Skillet
1 stove
1 whisk
1 spatula
1 tongs
1 corkscrew

Ingredients

Instructions

  • lay pork out and get it ready to go in the skillet to brown
  • brown the pork in the skillet
  • salt and pepper to your liking while the pork is browning
  • remove the pork from skillet and put in a pan to keep warm
  • have your heat on medium and the add wine to deglaze the pan
  • add the cherries
  • add the drained cherry juice
  • and heavy cream
  • add the sugar if the taste is to tart for your liking. This will take some of the tart edge off the flavor and let simmer for 5 minutes
  • lower the heat to low and place browned pork in skillet to heat it back up. Do not let the cherry sauce come back to a boil.
  • mix cherry sauce over the pork as reheating
  • take and place the pork on a platter and cover with the cherry sauce
