Cherry Kirsch Pork Schnitzel – A German Classic with Character
An authentic German classic we decided to explore in our own kitchen. Pork cutlets topped with a rich kirsch cherry sauce — simple ingredients, bold flavor, and a little adventure on the plate.

1 14 inch Cast Iron Skillet
lay pork out and get it ready to go in the skillet to brown
brown the pork in the skillet
salt and pepper to your liking while the pork is browning
remove the pork from skillet and put in a pan to keep warm
have your heat on medium and the add wine to deglaze the pan
add the cherries
add the drained cherry juice
and heavy cream
add the sugar if the taste is to tart for your liking. This will take some of the tart edge off the flavor and let simmer for 5 minutes
lower the heat to low and place browned pork in skillet to heat it back up. Do not let the cherry sauce come back to a boil.
mix cherry sauce over the pork as reheating
take and place the pork on a platter and cover with the cherry sauce
