Peel potatoes, cut into chunks and cover with water.
add oil and salt. I also add 1 tsp of granulated onion and 1 tsp of granulated garlic for extra flavor.
Place pan on burner on high heat and bring to a boil. reduce heat to medium and low boil approximately 20 minutes or until soft. I like to boil them until they are falling apart.
drain water off and put back in the pan.
add butter, sour cream, salt and pepper. mash the potatoes a bit with the beaters, then blend.
blend until smooth. place in a bowl and serve.
