This recipe is a family favorite and is versatile. You can use any type of meat you prefer. I have made it with ground beef and strips of steak. It can be topped with jalapenos, if you want it spicy hot.
Mexican Rice Casserole
My spin on Mexican Rice.

Ingredients
- 2 chicken breast cooked and shredded
- 2 cups long grain white rice cook per package instructions.
- 2 jars Pace Medium Chunky Salsa your preferred heat level
- 2 cups shredded cheese I use 4 cheese mexican blend
Instructions
- Put chicken in a baking dish. season chicken with a little salt and pepper and put a cup of chicken broth in and cover. bake at 350℉ for 30 to 40 minutes or until falling apart.
- while chicken is cooking, cook the rice.
- shred chicken in baking dish
- add salsa to the chicken and stir well.
- put rice in a greased 9x13 baking pan.
- spread rice out leaving a hollowed-out area in the center.
- put chicken and salsa mixture in the center of rice and spread out.
- cover top with the shredded cheese.
- bake at 350℉ for 30 minutes or until cheese is melted and starting to brown.
- remove from oven and let rest for 10 to 15 minutes before serving.
