Finding Inspiration in the Kitchen
I pulled some chicken out of the freezer, wondering what to make for supper. Melt-in-your-mouth chicken immediately came to mind, but I didn’t have enough thawed chicken to feed the whole family.
That’s when I decided to take my classic melt-in-your-mouth chicken recipe and adapt it — adding diced potatoes and green beans to make it a full, one-pan meal that could feed everyone.

Equipment

Ingredients
- 1 pound chicken breast diced
- ¾ cup mayonnaise
- 1 cup parmesan cheese shredded
- 3 cloves garlic minced. you can add this to taste.
- 6 cups potatoes dice approximately 6 to 8 potatoes.
- 2 cups green beans I used whole frozen
- 2 Tbs olive oil to grease the baking sheet
Instructions
- Mix mayo, cheese and garlic and set aside.
- wash and dice potatoes and set aside
- dice the chicken
- Mix the chicken into the mayo mixture.
- grease the baking sheet and spread out the potatoes.
- add the frozen green beans over the top of the potatoes.
- spread the chicken mixture on top. and put in the oven at 400℉ for 1 hour or until the potatoes are tender.
- when done, remove from the oven and Enjoy!
