I’m always on the lookout for new ideas for family meals, and this smoked sausage and tortellini skillet immediately caught my attention. One-pan dinners are perfect for busy weeknights, and I knew this dish would be easy to adapt with ingredients I already had on hand.

I like to think of cooking as an adventure. Recipes are guides — not rules — and it’s fun to put my own spin on them.

For this version, I used fresh tortellini and smoked sausage from the store. To add a little extra flavor, I stirred in some fresh herbs and a touch of cream to create a rich, savory sauce that clung to every bite.

Equipment

1 14 inch Cast Iron Skillet
1 stove
1 cutting boards
1 mixing bowl small to medium size bowls to hold ingredients
1 13 x 18 deep sided baking sheet I moved the dish to a deep sided baking sheet because my skillet wasn't large enough to hold all the ingredients.
1 knife
1 measuring cups
2 measuring spoons

Instructions

Prep work

  • cut the peppers into slices
  • cut onion into slices
  • cut garlic into slices
  • preheat skillet with about 3 Tbs of olive oil in the bottom
  • cut the block of cream cheese into small cubes.
  • slice the Sausage into 1/2 inch pieces.

Cooking

  • Sauté the Sausage in skillet to brown
  • once brown move to paper lined mixing bowl and set it aside for now
  • add the onions and peppers into the skillet and sauté until soft
  • once the onion and peppers are cooked down add the garlic, mix in and sauté for about a minute.
  • add in 32 oz of chicken broth or stock
  • whisk in 1 cup of heavy whipping cream
  • add the 8oz block of cubed cream cheese
  • add two Tbs of granulated garlic
  • add two tsp Italian Seasoning
  • add once cup of parmesan cheese
  • Mix everything together and melt down all the cheese.
  • Mix the cheese Tortellini into the sauce, make sure it is covered well in the sauce. Place a lid on your skillet and simmer for 10 minutes.
    (I didn't have a lid that would fit my skillet, so I used a baking sheet)
  • Add the Sausage back into the skillet and mix in.
    I had to put my sausage into a baking sheet; my Skillet wasn't big enough to hold all the ingredients.
  • Pour the Tortellini and cheese sauce over the sausage and mix well.
  • let rest, covered in foil, for about 5 more minutes and serve.
