This Mexican Rice Casserole has been a family favorite for years. One evening, I was trying to figure out a dinner that included rice. While looking through my pantry, I found some salsa and decided to brown some ground beef to mix with it.
The idea of making a “rice boat” — placing the beef and salsa mixture in the center of the rice and topping it all with cheese — came to mind. That simple idea turned into a recipe we’ve made again and again!

Ingredients
- 2 chicken breast cooked and shredded
- 2 cups long grain white rice cook per package instructions.
- 2 jars Pace Medium Chunky Salsa your preferred heat level
- 2 cups shredded cheese I use 4 cheese mexican blend
Instructions
- Put chicken in a baking dish. season chicken with a little salt and pepper and put a cup of chicken broth in and cover. bake at 350℉ for 30 to 40 minutes or until falling apart.
- while chicken is cooking, cook the rice.
- shred chicken in baking dish
- add salsa to the chicken and stir well.
- put rice in a greased 9x13 baking pan.
- spread rice out leaving a hollowed-out area in the center.
- put chicken and salsa mixture in the center of rice and spread out.
- cover top with the shredded cheese.
- bake at 350℉ for 30 minutes or until cheese is melted and starting to brown.
- remove from oven and let rest for 10 to 15 minutes before serving.
